I made this soup on a chilly, rainy day and it was just what I needed to warm up! Not only that, but it felt great to enjoy a creamy soup that was healthy, too. So often, creamy soups are made with high-fat ingredients, but this soup has lots of healthy things in it, as you can see in the recipe below. The recipe is from a new book called The Everything Vegan Meal Prep Cookbook by Marly McMillen Beelman, and I received a copy of it to review. Crispy treats are great, and I think they’re even better when you make them with extra add-ins! Last winter, I made some Chocolate-Peanut Butter Cup Crispy Treats which were really good, so I thought I’d try an autumn version with candy corn. I found this recipe at MyRecipes.com which had both candy corn and M&M’s. I thought I’d add some chopped peanuts too, since I like the candy corn-chocolate-peanut combination (you could use cashews instead of peanuts, if you like). Continue reading
I’m a big fan of potatoes, whether they’re baked, scalloped, fried, roasted, mashed…you name it! But what about potatoes for dessert…sweet potatoes, that is! That’s where this Sweet Potato Cinnamon Cake comes in, which I found in a cookbook called 300 Best Potato Recipes: A Complete Cook’s Guide. It has lots of different tasty potato recipes in it, from appetizers and soups to main dishes, sides, and desserts. This isn’t a new book—I actually reviewed it a few years ago, and I really loved this recipe from it!
