Sweet and Juicy Blackberry Crumble

This is the first Blackberry Crumble I’ve made. I’m a big fan of blackberries, but had never made a crumble with them, so I looked at some different recipes and came up with my own version. Not having made one of these before, I wasn’t quite sure what a typical blackberry crumble was supposed to be like…mine isn’t as gooey as I thought it would be—it’s more sweet-syrupy-juicy. The blackberries have just the right amount of sweetness, with a little punch of flavor from the lemon juice, and the buttery, brown-sugar crumble topping is a great finishing touch. I like using oats in the topping, too—anything with oats always seems a little healthier to me! 🙂

Veggie Potato Salad

Potato Salad is a favorite summer side dish of mine, and I wanted to try adding veggies to it—it’s always nice when you can work in some extra veggies to your food! I had an old potato salad recipe I had clipped from a magazine that had some veggies in it, so I modified that and added even more veggies to come up with this Veggie Potato Salad. I really like it and it’s filled with so many veggies, you could serve it as a light lunch on a bed of lettuce!

Patriotic Brownies

Here’s a super-simple desert for the 4th of July—Patriotic Brownies! Everyone loves brownies and these are even more yummy because they’re topped with frosting and fresh strawberries and blueberries! The brownies are from a mix with chocolate chips and chopped walnuts (or pecans) added in. Or, you can make your favorite homemade brownie recipe. Likewise, these are frosted with ready-made frosting, but you can use your favorite homemade vanilla or cream cheese frosting recipe instead!

Patriotic M&M’s Cookie Bars

I was wanting to make some cookie bars with M&M’s and since it’s so close to the 4th of July, I thought I might as well make them patriotic! So I used mini red, white, and blue M&M’s and some fun sprinkles, and theses Patriotic M&M’s Cookie Bars turned out so colorful and yummy! They are thick and chewy and very chocolatey, because they also have some mini semi-sweet chocolate chips mixed in. If that sounds like too much chocolate (is there such a thing?), you can always leave out the mini chocolate chips.
