Brown Sugar Shortbread

I’ve made shortbread before, but not brown sugar shortbread—until now! If you’ve never tried it yourself, I can tell you that it’s really good! It’s rich and buttery like the Scottish Shortbread I made during the holidays, but there are a few differences from that recipe—this Brown Sugar Shortbread is baked in one 9″ round cake pan instead of two 8″ rounds, so it’s a thicker shortbread, crispy on the outside, and a little chewy on the inside. The light brown sugar gives it a slightly different taste than traditional shortbread, but the main difference I noticed was the thickness and the chewiness.

Chocolate M&Ms Cake Mix Cookies

Cookies with M&M candies added in are so fun and colorful! I made some the other day with the M&Ms in spring colors. You can whip these cookies up in no time because they’re made with cake mix. These are great cookies for celebrating the different seasons—just use the seasonal M&Ms in the mix! Or make them for everyday snacks and use the regular colorful M&Ms or mini M&Ms!

Mint and chocolate make a great dessert combination and these Mint Chocolate Cookies are not only an easy dessert, they are rich, fudgy, and chewy, too! They’re also full of chocolate mint flavor, thanks to the mint chocolate baking chunks that you stir into the batter. Monster Cookies

Monster Cookies are great any time of the year, but these thick, chewy cookies seem especially tasty on a cold autumn day…especially when they’re warm from the oven! Jumbo Ginger Molasses Cookies

I like these gingery molasses cookies so much, I think I will make them every fall and winter! I first made them during this past Christmas season and think they’re a great cookie to munch on during the cold weather. They’re flavored with lots of ginger and some cinnamon and cloves. They’re slightly crispy on the outside and soft and chewy on the inside. And they are one big cookie! Big enough to satisfy any sweet tooth.
