Pumpkin-Cranberry Muffins

Pumpkin and cranberry are two great flavors to enjoy for the holidays! I really like these Pumpkin-Cranberry Muffins because they have dried cranberries, golden raisins, chopped pecans, and spices mixed in the batter—they just seem perfect for this time of year! You don’t really need a glaze for these, since they’re sweet enough on their own, but I’ve included a recipe for Cream Cheese Icing that you can spread or drizzle over these muffins if you like!

Cranberry Banana Bran Bread

After making some Apple-Bran Muffins, I wanted to use some All-Bran® cereal in a quick bread recipe to see how that would turn out. I happened to have some very ripe bananas, too, so this Cranberry Banana Bran Bread was what I ended up making!  It’s a good, hearty quick bread that is moist, thanks to  the bananas, with a nice sweetness from the dried cranberries—and I really think the cranberries are a must in this bread. They add a tasty little punch to the overall flavor. The bread just wouldn’t be as good without those dried cranberries!

Cranberry-Broccoli Salad

Hear’s a recipe that I like to make over the holidays, but it’s actually great any time of the year! It’s called Cranberry-Broccoli Salad. The dried cranberries and the honey-sweetened dressing add a light sweetness to this side

dish. And the sharp Cheddar cheese and bacon bits add some savory flavor. Mix those things in with some crunchy veggies, pepitas, sunflower kernels, and chopped pecans, and you have a delicious combination of flavors!
