Local Blueberry Crisp

Depending on where you live, blueberry season may be here already or getting close. Whether you pick your own blueberries or buy them at the farmers’ market or grocery store, baking with fresh blueberries is the best! I first made this recipe for Local Blueberry Crisp when I did a review of The Freds at Barneys New York Cookbook by Mark Strausman about 3 years ago. Freds at Barneys New York was a luxury dining destination in the Big Apple where you would often find actors, sports figures, fashion designers, and other celebrities enjoying a meal. Mark Strausman was the chef. Unfortunately, when I googled the restaurant recently, I found that it was “permanently closed.” It may have taken a hit during the pandemic, which was a hard time for so many restaurants.

Lemon Brownies with Lemon Glaze

Here’s another recipe for all of you lemon-lovers out there—I recently did a post on Easy Lemon Bars, and these Lemon Brownies are full of lemon flavor, too! They have a dense, brownie-like texture with plenty of lemon yumminess in every bite! I adapted this from a recipe I found at Rita’s Recipes. I used more lemon juice and zest for my version.

Strawberries and Cream Cake Squares

When I was making this dessert, I was thinking these would turn out more like cookie bars, but they’re actually pretty cake-y. They’re a little bit cake and a little bit cookie bar, so I decided to call them Strawberries and Cream Cake Squares. You definitely need to eat these squares with a fork, so I guess that makes them a little more cake than cookie!

Edamame Snap Pea Salad

If you like healthy veggie salads, this Edamame Snap Pea Salad with Sesame Vinaigrette is a great one to try! It’s a slightly crunchy, tangy salad mix of edamame and sugar snap peas, coated with a delicious Sesame Vinaigrette. If you aren’t familiar with edamame, it’s another word for green soybeans (I’ve heard it’s best to use non-GMO edamame.)

Peaches and Cream Cupcakes

I had some peaches that were really getting ripe and peach cupcakes seemed like a great way to use them! So I made some cupcakes with chopped peaches in the batter and frosted them with cream cheese frosting. Then I topped each cupcake with a fresh peach slice.
