Mango Radish Cucumber Salad

I first saw this recipe in an old issue of Martha Stewart Living and discovered that it’s also at MarthaStewart.com. The vivid colors drew me to this salad recipe and I knew I had to try it out! It’s not a combination I would have thought up myself for a salad, but I really liked it…the soft, sweet mango wedges combined with the crunchy cucumber slices and radishes taste really great with the tangy-sweet lime dressing!

I made a few small changes to the recipe on Martha’s site—I didn’t add lime zest to the dressing like the original recipe says to, and I added a little more honey to the dressing. It’s such a healthy, summery salad…you could serve it at a brunch or as a side at lunch or dinner—or have a larger serving and make it a light meal!

Mango Radish Cucumber Salad

MANGO RADISH CUCUMBER SALAD by NancyC,adapted from Martha Stewart
Makes 4 servings

1 mango, peeled and cut into wedges
1/2 of an English cucumber, thinly sliced (or substitute one medium-size regular cucumber)
1 bunch radishes (about 8), halved or quartered
2 Tablespoons lime juice (or juice from 2 limes)
2 Tablespoons extra-virgin olive oil
1 to 1 1/2 Tablespoons honey
Dash of salt

Arrange wedges of mango, cucumber slices, and radish chunks on a platter.

Make the dressing: In small bowl, whisk together the lime juice, olive oil, and honey. Add a dash of salt to taste.

Drizzle Lime Dressing over the salad and serve.
