
I’m so glad May will be here soon–the weather is warming up, flowering trees are in full bloom, and more and more plants and flowers are springing up! And this time of year I start craving more summery kinds of foods–foods that are easy to make with minimal or no cooking involved. Like salads, for instance.
This Street Corn Salad is different from your typical salad–in addition to corn, it has cherry tomatoes, radishes, and feta cheese. I thought this combination of ingredients sounded really good. So I made it and discovered that the radishes add a nice crispy-crunchiness to the mix and the feta cheese and lime juice give the salad a great tangy flavor. I decided to add in some chopped green onion because a little onion never hurts in a savory dish like this. If you like these ingredients, I’m sure you’d like this salad. It makes a great side dish for a summery lunch or dinner!
Street Corn Salad
STREET CORN SALAD by NancyC, adapted from MyRecipes
- 1/2 cup chopped fresh cilantro
- 3 Tablespoons lime juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 Tablespoons olive oil
- 4 cups fresh corn kernels (or use frozen corn kernels, thawed)
- 1 cup thinly sliced radishes
- 1 cup cherry or grape tomato halves
- 1/3 cup finely chopped green onion
- 1/3 cup crumbled feta cheese
In small bowl, for dressing, combine cilantro, lime juice, salt, and pepper–then whisk in the olive oil.
In medium-size bowl, stir corn, radishes, and tomatoes. Gently stir in dressing and spoon mixture onto a serving platter or shallow serving bowl; sprinkle with feta cheese, then serve.
