Fruity Lemonade

The weather is starting to warm up, and some days have been downright hot and humid! And on those kind of days, a nice tall glass of lemonade tastes really good! So why not make it Fruity Lemonade? I add fruit to water, so why not add it to lemonade too? It really is refreshing and I love the punch of color from all the different types of fresh fruit!

You can use your favorite fruit—when I made this pitcher of lemonade, I added strawberries, peaches, blueberries, kiwis, lemon, and lime. For the lemonade, you can use fresh-squeezed lemon juice, or use lemon juice from a bottle if you’re short on time. You just mix up the lemonade according to the directions below, then add in the fresh fruit. Pour yourself a tall glass of it and relax on your patio or by the pool! 🙂

Makes 6 servings

2 1/2 to 2 3/4 cups lemon juice (if making fresh-squeezed, you’ll need about 18 lemons)

3/4 to 1 cup granulated sugar (or a little more, to taste)

1/2 cup honey (or you can use more granulated sugar instead)

4 cups water

2 to 3 cups of assorted fruit (I used chopped strawberries, sliced peaches, blueberries, sliced kiwis, sliced lemons and limes). You may want an additional cup of fruit as a garnish for your individual serving glasses.

In a large pitcher, add lemon juice and sugar, stirring well; set aside.

In a microwave-safe bowl or large measuring cup, heat the water to almost boiling, then stir in the honey and mix until honey is dissolved. Add the honey/water mixture to the lemon juice/sugar mixture in the pitcher and stir everything together well.

Add in some ice, then add in the chopped and sliced fruit and stir. Refrigerate until ready to serve. When serving, garnish your serving glasses with additional fruit if desired.
