Chocolate Kiss Sugar Cookies

Here’s a yummy little chocolate sugar cookie with a Hershey’s Kiss tucked in the middle! As you can see in the photo above, you can decorate these cookies with candy cane kisses, milk chocolate kisses, or dark chocolate kisses. Or, you can use 3 chocolate chips pressed into the center of each cookie, and they’re yummy that way too!

Pumpkin Pecan Squares

If you’re a fan of pumpkin pie, you’ll have to try these Pumpkin Pecan Squares! They have a yummy pumpkin pie-type filling with a cookie-like crust. A crumbly mixture of flour, sugar, brown sugar, and butter make up the crust, and you use part of that mixture (with chopped pecans added in) to sprinkle on top of the pumpkin filling, creating a slightly crumbly, buttery topping. So it’s a cross between a pie and a cookie bar—the best of both worlds, you could say! 🙂

Scottish Shortbread

Rich, buttery shortbread is such a treat, and it’s one of my favorite cookies. It’s a great cookie to enjoy any time of the year, but I tend to think of making it more around the holidays. This particular shortbread is based on a recipe from an old newspaper clipping, and I’ve really been wanting to try it out!

Maple Oatmeal Scotchies

If you’re looking for a cookie that shouts “Autumn!,” take a look at these Maple Oatmeal Scotchies! This cookie is a different take on the traditional and well-loved Oatmeal Scotchies cookie. I changed up some ingredients and came up with this recipe and I must say, these are pretty yummy! These are chewy cookies with crispy edges. And their maple flavor comes from maple extract and pure maple syrup. The maple flavor goes really well with the butterscotch chips!
