Chocolate Chip Cranberry Nut Bars

Today has been a cold, snowy day and what better way to spend it than doing some baking? I had some fresh cranberries in my fridge and I thought it would be yummy to make something with cranberries and chocolate! There’s a recipe over at OceanSpray.com that I modeled my recipe after. I added some chocolate chips and vanilla extract to the batter for a little extra flavor.

I thought these bars turned out really good! You’ll need an 8 x 8″ square pan to make them—a 9 x 9″ pan won’t work as well. I used semi-sweet chocolate chips in my bars, but you could use white, milk, or dark chocolate chips instead—whatever kind of chips you like best! These bars take about 40 minutes to bake—the top of the bars bake up with a glossy sheen which may make you think they aren’t done baking, but give it the toothpick test—after 40 to 42 minutes, they should be done! The edges will be golden and the center area just very lightly golden.

CHOCOLATE CHIP CRANBERRY NUT BARS by NancyC
Makes 9-12 servings

2 large eggs
1 cup granulated sugar
1/2 teaspoon pure vanilla extract
1 cup all-purpose unbleached flour
1/3 cup butter, melted (you can use salted or unsalted butter)
1 cup fresh or frozen cranberries
1/2 cup chopped walnuts or pecans
1 cup semi-sweet chocolate chips (or use white, milk, or dark chocolate)

Preheat oven to 350°F. Grease an 8-inch baking pan; set aside.

In large bowl, beat eggs, then add the sugar and vanilla extract, beating until well blended. Stir in the flour and melted butter, blending everything well. Then add the cranberries, chopped nuts, and chocolate chips, mixing gently until these are evenly incorporated into the batter.

Spread batter evenly in prepared pan and bake at 350˚F for 40 to 42 minutes or until edges are golden brown and toothpick inserted in center comes out clean. Let cool completely, then cut into large or small bars.
