There sure are a lot of big food-related holidays and events during the winter…Christmas, New Year’s Eve and Day, Super Bowl Sunday, Valentine’s Day, and St. Patrick’s Day—no wonder it’s so hard to diet this time of year! If you feel like you’re needing a little dose of something healthy, this is just the thing. I…

Cheesy Roasted Cauliflower
I really didn’t know what to expect when I was making this Cheesy Roasted Cauliflower. I had never tried roasting cauliflower before, so this was something new for me. I’m not a particularly big fan of cauliflower either, but I do love roasted veggies—so I thought it would be worth a try!

Cheesy Spinach Bake
This Cheesy Spinach Bake casserole is a great way to enjoy spinach! I like it because it’s made with fresh baby spinach, not frozen, and two kinds of cheese–Sharp Cheddar and Monterey Jack. I found this recipe at MyRecipes and changed it a little by using spicy mustard instead of Dijon mustard, and adding extra…

Arkansas Green Beans

I added a Fresh Lemon Dressing on top, which was a nice lemony, tangy, finishing touch. I also made this yummy chicken and veggie dish with the organic Southwestern Blend frozen vegetables, also from Whole Foods.

Cheesy Hash Brown Potatoes
My friend Jane Ann made this cheesy potato casserole the other day. Her department was having a special lunch at work, and this was a side dish she made for the meal. So I took some photos of it and then, of course, I had to eat it…couldn’t let any of this creamy potato cheesiness…

Baked Sweet Potato Fries
The first time I ever had sweet potato fries was at a restaurant about 8 years ago. They had such a delicious sweet coating…it was kind of like eating a dessert! So I thought I’d try making some baked sweet potato fries, since I don’t eat fried foods much. I looked up some recipes and…

Honey-Balsamic Peas and Carrots
I never used to be a big fan of peas and carrots. When I was growing up, our family would eat those frozen-packaged peas and carrots (the ones with the carrots cut into little block shapes). Putting a pat of butter on them helped a little, but it was hard to get excited about having…

Parmesan-Cheddar Squash Casserole
I found a delicious yellow squash recipe about three years ago in an old Southern Living magazine, and made a few small changes to it—it has become one of my favorite side dishes! I usually make it in the summer months, when yellow squash is so abundant. I either use squash from my garden or purchase it…
