Potato Salad is a summertime favorite—great for picnics, potlucks, cookouts, meals on the patio…you name it! There are lots of different potato salad recipes out there, but I wanted to make one that was on the classic side, and the classic potato salads I’ve had seem to always include cubed potatoes, mayo, vinegar, mustard, chopped pickles or pickle relish, hard boiled eggs, and paprika sprinkled on top!
