Potato Salad is a summertime favorite—great for picnics, potlucks, cookouts, meals on the patio…you name it! There are lots of different potato salad recipes out there, but I wanted to make one that was on the classic side, and the classic potato salads I’ve had seem to always include cubed potatoes, mayo, vinegar, mustard, chopped pickles or pickle relish, hard boiled eggs, and paprika sprinkled on top!
Sometimes celery and chopped onion are added into potato salads too, so I used all of these ingredients, plus I added just a little sugar. Sugar may seem like a strange ingredient to add to potato salad, but I think it adds a nice flavor! I really like the sprinkle of paprika on the potato salad too!
Classic Potato Salad
CLASSIC POTATO SALAD by NancyC
Makes 6 to 8 servings
3 pounds potatoes, peeled and cut into 3/4-inch cubes
1 to 1 1/4 cups mayonnaise (use 1 1/4 cups for a creamier potato salad)
1 teaspoon sugar
1/2 Tablespoon vinegar
1 teaspoon yellow mustard
1/2 teaspoon salt
1/4 teaspoon ground pepper
1/4 cup sweet pickle relish
2/3 cup finely chopped onion
2 celery ribs, chopped
4 hard boiled eggs, chopped
Paprika, for garnish
Place peeled and cubed potatoes in large saucepan, covering with water (add some salt to the water). Bring to a boil. Reduce heat, then simmer and cook until potato cubes are tender, about 10 minutes. Drain and cool to room temperature.
In a large bowl, mix the mayonnaise, sugar, vinegar, mustard, salt, and pepper, blending well. Add the cubed potatoes, pickle relish, onion, and celery; stir and toss gently until all ingredients are coated with the mayonnaise mixture. Gently stir in the chopped eggs.
Cover and refrigerate until chilled. When ready to serve, garnish with a sprinkle of paprika.

I’m happy to see somebody not be scared of mayonnaise! There’s nothing like good mayo – I like Hellman’s for store-bought. Great salad, although I personally don’t like pickle relish.

I’ve never made potato salad before but it’s one of my family’s favorite. My parents always buy the containers they sell at Costco but I can imagine how much more yummy it is homemade. Thinking about it, I am salivating!
