I’m a big fan of deviled eggs, especially in the summer! I love the classic deviled eggs like mom used to make, but I thought I’d try making some with a few extra add-ins, like bacon and fresh chives. You just can’t go wrong when you add bacon and chives to a recipe! 🙂
A picnic or cookout doesn’t really feel complete without deviled eggs, right? And if you’re a Southerner, you’ve probably had deviled eggs at Thanksgiving too! They’re always a big favorite whenever you serve them!
Deviled Eggs with Bacon and Chives
DEVILED EGGS WITH BACON AND CHIVES by NancyC
Makes 24 deviled egg halves
1 dozen hard-boiled eggs, peeled
5 Tablespoons mayonnaise
1 Tablespoon lemon juice
1 Tablespoon white vinegar
1/2 to 1 teaspoon mustard powder
2 teaspoons yellow mustard
salt and pepper to taste
2 Tablespoons fresh chives, chopped
4 slices bacon, cooked and crumbled into bits or pieces (or 4 heaping Tablespoons real bacon bits or pieces)
FOR GARNISH: 2 slices bacon, cooked and crumbled into bits (or 2 heaping Tablespoons bacon bits), 2 Tablespoons fresh chives, chopped, and 2 Tablespoons shredded Parmesan cheese
Slice the hard-boiled eggs in half lengthwise and remove the yolks; set whites aside.
Place the yolks in a small bowl and add mayonnaise, lemon juice, vinegar, mustard powder, yellow mustard, and salt and pepper to taste. Stir well to combine these ingredients, then add in the chopped chives and bacon.
Using a spoon, fill egg white halves with egg yolk mixture, shaping the mixture into nice little mounds. To garnish, sprinkle the deviled eggs with bacon bits, chives, and shredded Parmesan cheese. Refrigerate until ready to serve.

Love a deviled egg Nancy! With just about any topping!
I think my mother made her deviled eggs for every gathering, no matter the season, and I’ve been making them too because everyone loves them. No matter the occasion, family gathering or fancy event, people hover by the platter and hope they are not being too greedy.
