Have you ever made “roll-ups”? Sometimes they’re called “pinwheels.” I’ve made a few different recipes like that: Salsa Roll-Ups and Veggie Tortilla Pinwheels. And here’s another really good roll-ups recipe that’s perfect for springtime—it’s light, fresh, and really tasty! It’s a recipe called BLT Roll-Ups, and it’s from a cookbook called The Living Table: Recipes and Devotions for Everyday Get-Togethers by Abby Turner.
There are a lot of great recipes and ideas in the book, and I really was drawn to this recipe because it just sounded like the perfect springtime snack! And who doesn’t like BLT’s? You get that great BLT flavor in the form of a roll-up! 🙂
BLT Roll-Ups
BLT ROLL-UPS from The Living Table
Serves 8-10
6 spinach tortillas
2 Tablespoons mayonnaise (per wrap—or a little more, if needed)
1 head lettuce
12 strawberries, sliced
6 slices deli turkey
12 slices bacon, cooked (2 slices per tortilla)
1. Lay out the spinach tortillas on a flat surface.
2. Spread mayo first, then lettuce, strawberries, turkey, and 2 pieces of bacon.
3. Roll the tortilla tight. Pro Tip: Spreading enough mayo is crucial to getting the tortilla to stay wrapped tight.
4. Place in the freezer for 10 minutes to set.
5. Remove the tortillas from freezer, cut off ends, and then cut into 1/2-inch-wide rounds.

Just a little note: When I was buying my spinach tortillas, I noticed there were two sizes—a smaller size (about 6″ round) and a larger size (about 10″ round). I bought both sizes to try them out, and both worked, but I felt that the larger 10″ size was easier to roll up. I have never made a roll up but I love them! I buy a pack at the Costco deli every time I am doing our grocery shopping. Not only is it perfectly sized but it is scrumptious. And I can’t believe how easy it is to make! Do you have a recommendation for alternate ingredient for mayo? The other half doesn’t like it that much.

Hi Maureen, you could substitute mashed avocado or guacamole for the mayo—that would be a great tasty as well as healthy substitution! 🙂
