Pumpkin Pie Smoothie

I mostly make smoothies in the spring and summer, but after making this Pumpkin Pie Smoothie, I may be making more of them in the autumn! It’s always nice to have a healthier treat like this that has the flavors of fall!

This smoothie has a lightly creamy texture and is flavored with pumpkin, cinnamon, and apple cider. I also used plain kefir in it, but you could substitute plain yogurt, and that would make the smoothie more creamier and thicker. I’ve also included other ideas in the recipe on how to thicken it up more if you prefer your smoothies on the thicker side!

PUMPKIN PIE SMOOTHIE by NancyC
Makes 1 (10-ounce) serving

1/2 cup plain kefir (or substitute plain yogurt for a thicker smoothie)
1/2 cup apple cider or unsweetened apple juice
1/4 cup unsweetened pumpkin puree (not pumpkin pie filling); (if you’d like a thicker smoothie, use 1/3 cup puree)
1/2 medium fresh or frozen banana (for a thicker smoothie, use a whole frozen banana)
2 Tablespoons pure maple syrup or honey
1/2 to 1 teaspoon ground cinnamon
1/2 teaspoon pure vanilla extract
1/2 teaspoon pumpkin pie spice
1/2 cup ice cubes (or use a little more, like 2/3 to 3/4 cup, for a thicker smoothie)
Optional: Additional ground cinnamon, for sprinkling on top

Place all ingredients in a blender and blend until smooth. If desired, sprinkle some additional cinnamon on top.
