
Fruit salad is so good and refreshing during the hot summer months! And this Rainbow Fruit Salad is so colorful, it’s a feast for the eyes! I actually made this fruit arrangement for a photo I did for Mary & Martha back in early spring, which was used on a recipe card. The fruit is arranged on the Done in Love Serving Board and the Vanilla Pudding Dip, a recipe from a Mary & Martha consultant, is served in one of the Simply Elegant Dip Bowls, which comes in a set of 3. I really love these little bowls!
This fruit salad is perfect for a brunch or any special gathering. With the colorful variety of fruit, there’s something everyone enjoys nibbling on and it’s healthy, too! Serving it with the Vanilla Pudding Dip adds a nice sweetness to the mix, and I also recommend including a bowl of your favorite nuts (pistachios go well with this) and some cubed cheese.

RAINBOW FRUIT SALAD and VANILLA PUDDING DIP
RAINBOW FRUIT SALAD:
- 2 to 3 cups each of: blueberries, sliced kiwis, chopped mango, cantaloupe, and strawberries
NOTE: You can substitute chopped pineapple for the mango, orange segments for the cantaloupe, green grapes for the kiwi slices, and raspberries for the strawberries. You can also add blackberries or red grapes if you want to add a purple hue to your rainbow, and cubed watermelon if you want to add a pink hue.
On a large platter or serving board, arrange the prepared fruit in the shape of an arch. To mimic the colors of the rainbow, start with blueberries, then kiwis, mango, cantaloupe, and strawberries. Serve alone or with a fruit dip, like the Vanilla Pudding Dip (recipe below). You can also include some pistachios or other nuts, and cubed cheese, in separate small serving bowls.
VANILLA PUDDING DIP (Recipe courtesy of Mary & Martha)
- 1 (5.3-ounce) container vanilla Greek yogurt
- 1 (8-ounce) container thawed whipped topping (like Cool Whip ©)
- 3 Tablespoons vanilla instant pudding powdered mix
Mix all ingredients until well combined (you can mix the ingredients together right in the whipped topping container).
Spoon mixture into a dip bowl for serving. Optional: garnish with chopped pistachios or other nuts—or shredded coconut, grated chocolate, or granola cereal.

This Rainbow Fruit Salad is so easy to put together! The most time-consuming part of making it is peeling/chopping the fruit that needs to be prepped, but if you’re short on time, you can always buy pre-chopped fruit.
