
Hello, friends! I hope you are all doing well! It’s been a good while since I’ve posted—in fact I believe this is my first post this summer and the season is almost over! Where did the time go? It’s been a great summer but a very hot one, too! So, partly because things have been busy and partly because it’s been so hot, I haven’t been cooking or baking as much! But I did make this Chickpea and Veggie Pasta Salad that I wanted to share with you—no baking required! And the only cooking involved is boiling the pasta! 🙂
This pasta salad is great as a side dish, but it also works as a main dish for a simple lunch or dinner. And it’s a tasty item to bring for a potluck too. In addition to chickpeas, it also has black beans, a good array of chopped veggies, some Pepper Jack cheese, and a simple dressing—all tossed together with some rotini pasta. Just top it all off with some freshly-chopped basil and serve!

Chickpea and Veggie Pasta Salad
CHICKPEA AND VEGGIE PASTA SALAD by NancyC
Makes about 8 to 10 servings
8 ounces rotini pasta (about 1 2/3 cups), cooked according to package directions and drained
1 (15-ounce) can chickpeas, rinsed and drained
1 (15-ounce) can black beans, rinsed and drained
2 cups grape or cherry tomatoes, halved or whole
1 (12-ounce) package frozen corn kernels, thawed (about 2 1/2 cups)
1 cup seeded and chopped cucumber
1 cup chopped yellow or orange bell pepper
1 cup finely chopped red onion
1 (2.25-ounce) can sliced black olives
1 (8-ounce) block Pepper Jack cheese, cut into small cubes, divided
1/4 cup light olive oil
1/4 cup apple cider vinegar
1 Tablespoon honey
1/2 teaspoon salt
1/4 teaspoon black pepper
Optional, for garnish: 1/2 cup chopped fresh basil
1. In large serving bowl, add cooked and drained pasta, chickpeas, black beans, grape or cherry tomatoes, thawed corn, chopped cucumber, chopped bell pepper, chopped red onion, sliced black olives, and cubes of pepper jack cheese (save 1/2 cup of cubed cheese for sprinkling on top).
2. For the dressing, combine the oil, vinegar, honey, salt, and pepper in a jar with lid; cover with lid and shake well. Pour dressing over salad and toss, coating everything well, then top with remaining 1/2 cup of cubed cheese and chopped basil right before serving.
NOTE: If serving up to 24 hours later, refrigerate the salad and dressing separately and toss together just before serving.

If you prefer meat in your pasta salad, you could also add in a few cups of chopped cooked chicken, turkey, or ham into this mix of ingredients. It’s an easy recipe to make, but keep in mind that it does involve chopping up some veggies, so allow enough time to do that! Also, this recipe makes about 9 cups of salad, which I estimate to be about 8-10 servings as a side dish. If you are serving this as a main dish, it might be more like 6 servings.

There’s still some weeks of summer left, so I hope you have the chance to enjoy this salad before autumn comes around! Although we’ll miss the long, sunny days of summer, there’s a lot to look forward to in the fall. Not only that, we also have the promise that beautiful summer will come again! As long as the world exists, there will be a time for planting and a time for harvest. There will always be cold and heat, summer and winter, day and night (Genesis 8:22 GNT).
