Coleslaw Pasta Salad

If you’re a fan of coleslaw, this is a great side dish you’ll enjoy for summer! It’s a mix of crunchy veggies and a delicious, creamy dressing sweetened with honey…with pasta added in! You could actually have this as a light meal if you wanted to, because the pasta makes it filling. Pasta salads are great for summer meals because they’re refreshingly cool, and this Coleslaw Pasta Salad is no exception!

This is an easy-to-make dish, because you can use the pre-shredded, packaged cabbage coleslaw mix, which saves a lot of time! All you have to do is cook the pasta and chop some additional veggies (green onion, bell pepper, celery, and cucumber). The simple dressing is easy to make, too! Serve this as a side or light main dish for a summer lunch or dinner—if serving as a side, it goes great with burgers, hot dogs, or grilled chicken. If serving as a main dish, add some rolls or crusty bread and pour some tall glasses of iced tea or lemonade, and you have a great meal!

Coleslaw Pasta Salad

COLESLAW PASTA SALAD by NancyC
Makes 12 servings

1 (8-ounce) package ditalini or your favorite kind of pasta
1 1/3 cups chopped green onion (about 4 to 5—chop both the white bulbs and green stems)
1 large red or orange bell pepper, chopped
3/4 cup chopped celery
1 1/3 cups chopped English cucumber
4 to 5 cups of coleslaw mix from a 16-ounce package

Dressing:
1 1/2 cups light or regular mayonnaise
1/4 cup honey
1/4 cup apple cider vinegar
Dash of salt and pepper, to taste

Cook pasta according to package directions. Drain, then rinse in cold water and drain again; add drained pasta to a large serving bowl.

Add in the green onion, bell pepper, celery, cucumber, and coleslaw mix, tossing everything together; set aside.

In small bowl, mix the dressing ingredients together—the mayonnaise, honey, apple cider vinegar, and salt and pepper. Pour this dressing over the ingredients in the large serving bowl and toss everything together, making sure all ingredients are coated with the dressing.

Cover and refrigerate 1 to 2 hours, then serve.

The pasta used in this dish is called ditalini. I’ve never used that kind of pasta in a recipe before, but I love the small size of it—it’s perfect for this type of dish! If you don’t have that type of pasta on hand, you could also use macaroni, rotini, or bowtie pasta.
