Lemon-Dill Dip

When you plan your summer get-togethers, whether they’re family picnics, large cookouts and potlucks, or simple outdoor meals, be sure to include a summery dip that you can serve with your favorite raw veggies and chips. Like this Lemon-Dill Dip! The lemon-dill flavor is great for this time of year, and it’s so easy to make!

I like serving this dip with baby carrots and cucumbers, but you could also serve it with broccoli florets, sliced zucchini or squash, sugar snap peas, or bell pepper, cut into strips for dipping. It’s also good with potato chips, tortilla chips, pretzels and crackers, too—use your favorite kind!

LEMON-DILL DIP by NancyC
Makes 4-6 servings

1 cup sour cream
3/4 cup mayonnaise
1 teaspoon fresh lemon juice
1 teaspoon lemon zest
3 Tablespoons finely-chopped fresh dill, plus a little more for garnish
2 teaspoons minced onion
1 teaspoon garlic powder
1/2 teaspoon salt
Dash of pepper

In medium-size bowl, mix together the sour cream, mayonnaise, and lemon juice.

Next, add in the lemon zest, fresh dill, minced onion, garlic powder, salt, and pepper.

Cover and refrigerate for 1 to 2 hours before serving.

When ready to serve, garnish the top of the dip with a sprinkle of chopped fresh dill, if desired.

Serve dip with raw veggies, crackers, pretzels, and/or chips.

NOTE: A variety of fresh, raw veggies go well with this dip, like baby carrots, cucumbers, bell peppers, zucchini, yellow squash, sugar snap peas, and broccoli florets. Cut your veggies into slices or strips for dipping!

Easy recipes like this are great for summer, and if you’re growing your own fresh veggies in your garden, this dip is a great way to use and enjoy them!

One of the things I love about summer is that it’s a season where life slows down a little and we take time for rest and enjoy the outdoors more. It’s a season that reminds me of Psalm 23:2–3 (GNT): He lets me rest in fields of green grass and leads me to quiet pools of fresh water. He gives me new strength. Hope you are enjoying the refreshment of these slower and longer summer days!
