Strawberry Crisp

If you’re a strawberry-lover, Strawberry Crisp makes a wonderful dessert for spring and summer! This recipe is made using six 6-ounce ramekins, which is a great size for a smaller dessert—I think it’s just the right amount! The topping is a sweet, crumbly mix of oats, a little flour, brown sugar, and butter.

When you’re baking this dessert, you’ll want to place your ramekins on a baking sheet, just in case the strawberry filling bubbles over a little. Mine didn’t, but they came close! This dessert is a great way to enjoy strawberries and I think it tastes best the day you make it. If you want to make this dessert a little more special and decadent, top each individual strawberry crisp with a scoop of vanilla or strawberry ice cream and/or a generous topping of whipped cream!

Strawberry Crisp

STRAWBERRY CRISP by NancyC
Makes 6 servings (in 6-ounce ramekins)

TOPPING:
1/3 cup all-purpose unbleached flour
1/2 cup old-fashioned oats
1/4 cup brown sugar, packed
3 1/2 Tablespoons salted butter, melted

FILLING:
3 teaspoons corn starch
1 Tablespoon lemon juice
4 1/2 cups strawberries, hulled and sliced
1/3 cup granulated sugar

1. Preheat oven to 350˚F. Lightly grease six (6-ounce) ramekins; set aside.

2. Make the topping: In a small bowl, mix the flour, oats, brown sugar, and melted butter with a fork until everything is well mixed; set aside.

3. Make the filling: In a medium-size bowl, dissolve the corn starch in the lemon juice, then add in the sliced strawberries and granulated sugar; toss all the ingredients together.

4. Divide the filling evenly among the 6 prepared ramekins, then sprinkle the top of each with the oat topping.

5. Arrange the ramekins on a baking sheet, then place in the oven, and bake for 35 minutes, until topping is golden and the filling is thickened and bubbly. Let cool for about 10 minutes before serving.

Optional: top with whipped cream or a scoop of vanilla or strawberry ice cream.
