Blueberry Chip Muffins

Blueberry muffins are a great summertime treat—especially these Blueberry Chip Muffins! They’re filled with lots of fresh blueberries and also have vanilla chips mixed in the batter to give them a little extra creamy sweetness! So, not only could you have these for breakfast or brunch, but they could even work as a dessert! Or for teatime. Or make a batch for your next picnic. So many possibilities! 🙂

If you’re not a fan of white chocolate chips, you can substitute dark, semi-sweet, or milk chocolate chips in these muffins. And if you don’t have fresh blueberries on hand, you could use frozen, but your baking time may be a few minutes longer. Take a break and enjoy them with coffee or tea in the cool of the morning or a glass of lemonade on a hot afternoon!

Blueberry Chip Muffins

BLUEBERRY CHIP MUFFINS by NancyC
Makes 12 muffins

1 2/3 cups all-purpose unbleached flour
3/4 cup granulated sugar
1/2 teaspoon salt
1 Tablespoon baking powder
1/3 cup canola oil or light olive oil
1 large egg
1 teaspoon pure vanilla extract
1/3 cup plus 1 Tablespoon Half & Half (light cream)
1 cup fresh blueberries
3/4 cup white chocolate (or vanilla) chips

Preheat oven to 350˚F. Line a muffin pan with 12 paper liners; set aside.

In medium-size bowl, blend flour, sugar, salt, and baking powder.

In small bowl, mix the oil, egg, and vanilla extract, then mix in the Half & Half. Pour into the flour mixture and mix everything together until just combined.

Fold in the blueberries and white chocolate chips, mixing into the batter.

Spoon batter into the prepared muffin cups. Bake at 350˚F for 23 to 25 minutes, until toothpick inserted in center comes out clean.

NOTE: You can substitute dark, semi-sweet, or milk chocolate chips for the white chocolate chips.
