I still had a few cans of pumpkin puree in my cupboard, and I used one of them for this super-easy recipe! It’s probably the easiest mini bundt recipe ever! The 3 ingredients are a box of Spice cake mix, a can of pumpkin puree, and a teaspoon of vanilla, maple, or cinnamon extract. There’s another optional ingredient, confectioners’ sugar, for dusting on top, which I highly recommend because the dusting of sugar makes them look so pretty! 🙂
These 3-Ingredient Pumpkin Spice Mini Bundts are really big on pumpkin flavor and SO moist! They are super yummy as well as super easy! You’ll need a 6-cup mini bundt pan for these—or you can use a 6-cup jumbo muffin pan, but I really love these as mini bundts! 🙂
3-Ingredient Pumpkin Spice Mini Bundts
3-INGREDIENT PUMPKIN SPICE MINI BUNDTS by NancyC
Makes 6 mini Bundt cakes
1 (15-ounce) box Spice cake mix
1 (15-ounce) can pumpkin puree (not pie filling)
1 teaspoon pure vanilla OR maple OR cinnamon extract
Optional: confectioners’ (powdered) sugar, for dusting on top
Preheat oven to 350˚F. Grease a 6-cup mini Bundt pan; set aside.
In large bowl, mix the Spice cake mix, pumpkin puree, and flavored extract, mixing everything well (batter will be thick). Spoon batter into prepared mini bundt pan, dividing batter evenly among the 6 cups.
Bake at 350˚F for 16 to 18 minutes or until toothpick inserted near centers comes out clean. Let mini bundts cool in pan for about 5 minutes, then remove from pan and cool completely on wire rack. After cooling, dust the top of the mini bundts with confectioners’ sugar, if desired.
