Cheesy Ham and Hash Brown Casserole

If you like comfort food for breakfast, this Cheesy Ham and Hash Brown Casserole is a very good recipe to try! It’s every bit as cheesy, creamy, and yummy as I thought it would be! How can you go wrong with ham, cheese, and potatoes?

This casserole is like a breakfast in itself, but you can also serve it with other breakfast items like an egg casserole, fruit salad, pancakes, or even just biscuits or toast. Doesn’t that sound great for a weekend brunch?! This recipe is adapted from a one at

CHEESY HAM AND HASH BROWN CASSEROLE by NancyC, adapted from Allrecipes
Makes 10-12 servings

1 (32-ounce) package frozen hash brown potatoes, thawed
8 ounces cooked, diced ham or bacon (crumble cooked bacon into pieces)
2 (10.5-ounce) cans condensed cream of potato soup
1 (16-ounce) container light or regular sour cream
3 cups shredded sharp Cheddar cheese; divided
1 1/2 cups shredded Parmesan cheese; divided (from the refrigerated section of your grocery store)

Preheat oven to 375˚F. Lightly grease a 9×13-inch baking dish; set aside.

In a large bowl, mix thawed hash browns, ham or bacon, cream of potato soup, sour cream, 2 1/2 cups of the Cheddar cheese (save remaining 1/2 cup for sprinkling on top), and 1/2 cup of the Parmesan cheese (save the remaining 1 cup for sprinkling on top).

Spread mixture evenly into prepared baking dish. Sprinkle with the remaining 1/2 cup of Cheddar cheese and 1 cup Parmesan cheese. Bake for 1 hour at 350˚F or until bubbly and lightly browned. Serve immediately.
