Apple-Kale Smoothie

Thought I would throw in a healthy-ish recipe to balance out the sweet cakes and cookies I’ve been sharing! It’s all about balance, right? So if you like making smoothies, this is a good and healthy one to try! You might be skeptical about using kale in a smoothie, but it really does taste good—the apple flavor is what stands out!

I was inspired by this smoothie recipe over at Real Simple. I wasn’t sure what to expect, but when I took my first sip I was surprised at how much I liked it! The banana and apple juice make a nice sweet balance to the kale and celery (I used one whole small banana instead of half a banana that the original recipe calls for). So if you’re craving something healthy, this is the perfect thing to try for breakfast or to sip on in the afternoon!

APPLE-KALE SMOOTHIE by NancyC, adapted from Real Simple
Makes 1 serving

3/4 cup chopped kale, ribs and thick stems removed (I used organic kale)
1 small stalk celery, chopped (I used organic celery)
1 small banana, sliced
1/2 cup apple juice
1/2 cup ice cubes or crushed ice
1 Tablespoon fresh lemon juice

Place the chopped kale, chopped celery, banana slices, apple juice, ice, and lemon juice in a blender. Blend until smooth and frothy.

Because this is an apple-flavored smoothie, it seems perfect for this early fall time of year! Do you have a favorite healthy smoothie you like to make?
