I enjoy making different fruity salsas in the summer months, like Peach-Cucumber Salsa, for example. And here’s another one I like—Watermelon-Peach Salsa! I’m a big fan of both watermelon and peaches, and if you are too, you’ll need to try this!
This summery salsa combines watermelon, peaches, basil, and chives (or green onion stems), flavored with some lime juice and hot pepper jelly. The pepper jelly makes this quite spicy, so if you don’t like spicy, you could substitute peach jelly. Serve this salsa with tortilla chips for a fruity snack or serve it in cups to eat as a fruit side or salad.
Watermelon-Peach Salsa
WATERMELON-PEACH SALSA by NancyC
Makes 4 servings
1/2 cup hot pepper or red pepper jelly (if you don’t like spicy, use peach jelly)
1/4 cup lime juice, fresh or bottled
Optional: 1 Tablespoon lime zest
2 cups seeded and diced watermelon
1 1/2 cups peeled and diced fresh peaches (I used a combination of yellow and white peaches)
1/3 cup chopped fresh basil
1/3 cup chopped fresh chives or green onion stems
Fresh basil sprigs, for garnish
In a large bowl, whisk together pepper jelly (or peach jelly), lime juice, and lime zest (if using); stir in watermelon, peaches, basil, and chives. Toss ingredients to coat everything evenly. Serve with tortilla chips or in small cups as a fruit side or salad.
