
If you’re a cornbread lover, here’s a winter and holiday version you can try—Gingerbread Cornbread! It’s just the thing to serve with your winter soups, stews, and chilis. Or you can have it for breakfast, warm and spread with butter and maybe even a light drizzle of honey—and serve it with eggs if you like. You could even substitute this cornbread for rolls in your dinner menu!

The texture of this Gingerbread Cornbread is similar to a quick bread. And it’s flavored with all those wonderful spices that make gingerbread so yummy…ground ginger, cinnamon, cloves, and nutmeg. The molasses gives it a rich flavor, too. Make your cold-weather days more cozy and treat yourself to this delicious cornbread! 🙂
Gingerbread Cornbread
GINGERBREAD CORNBREAD by NancyC
Makes an 8 x 8″ pan
1 cup yellow cornmeal
1 cup all-purpose unbleached flour
3/4 cup packed light brown sugar
2 teaspoons ground ginger
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1 teaspoon salt
1 Tablespoon baking powder
2 large eggs
1 cup buttermilk
1/4 cup light olive oil
1/4 cup molasses
1/2 teaspoon vanilla extract
Preheat oven to 350˚F. Grease or spray an 8 x 8″ pan; set aside.
In a large bowl, blend the cornmeal, flour, brown sugar, ginger, cinnamon, cloves, nutmeg, salt, and baking powder all together; set aside.
In a medium-size bowl, mix together the eggs and buttermilk, and then add in the oil, molasses, and vanilla extract, stirring everything together until well combined. Add this mixture to the dry ingredients in the large bowl, mixing all ingredients together well.
Pour batter into prepared pan, spreading evenly, and bake at 350˚F for 30 to 35 minutes, until toothpick inserted in center comes out clean.
Let cool 5 to 10 minutes in pan on a wire rack and cut into squares. Serve warm with butter. Or, cool completely in pan on a wire rack and then cut into squares.

Cold winter days are the perfect time to enjoy gingerbread-flavored baked goods. And we’ve had some very cold and windy days lately! The kind of weather we’ve been having reminds me of these words in Job 38:22-23 (The Message): Have you ever traveled to where snow is made?… Or to the place from which the wind blows? There’s no snow accumulation out my way right now, but plenty of cold and wind!
