Mango Blender Ice Cream

This “ice cream” is made in a blender, so it’s super-easy to make! It has the consistency of “soft serve” ice cream and you can enjoy eating it right after you’re done blending all the ingredients together! If you want to add a topping, you could sprinkle coconut flakes (that’s what I did), shaved chocolate, a dollop of whipped cream, a drizzle of caramel topping…the possibilities are endless! 🙂

There are just three simple ingredients, so you can whip up this dessert in no time! You just need frozen mango chunks, whole milk (or Half & Half) and some honey. It’s a cool and tasty treat on hot days, and we’ve really been having a lot of those lately! 🙂

Mango Blender Ice Cream

MANGO BLENDER ICE CREAM by NancyC
Makes 2 to 3 servings

2 1/2 cups frozen mango chunks
1 cup whole milk (or substitute Half & Half—light cream)
3 Tablespoons honey

Add all the ingredients—the mango chunks, milk (or Half & Half), and honey—into a blender. Blend everything together until smooth and creamy.

Spoon ice cream into serving bowls or cups and add toppings, if desired (coconut flakes, shaved chocolate, whipped cream, a drizzle of caramel or fruit topping, or whatever you like!).

Serve immediately.

Note: If you prefer a thicker consistency that you can scoop, put the ice cream in your freezer in a freezer-safe container for a couple of hours. Then scoop and serve!

It helps to use a blender that is good at blending frozen fruit, so your ice cream will turn out nice and creamy. Some of the less powerful blenders probably wouldn’t work as well.
