Quick Hummus

Here’s a healthy recipe I meant to post a few months ago, but better late than never! 🙂 If you’re a fan of hummus, you’ll enjoy this Quick Hummus from a cookbook called UNWIND: A Devotional Cookbook for the Harried and Hungry by cooking show host Aarti Sequeira. In this book, you’ll find recipes from Aarti’s kitchen, along with reflective devotions, inspirational quotes, and some Scriptures to help you unwind during your busy days! I like hummus, so I tried this Quick Hummus recipe and it really is good and easy to make!

I learned something new when I made this recipe—the chickpea water in a can of hummus actually has a name: aquafaba! I never knew that! So I’ve added a new word to my cooking vocabulary! 🙂 This hummus is not only a good and healthy dip, it works great as an appetizer as part of a relish tray with lemon slices and olives. Use pita bread for dipping into the hummus and/or use fresh, raw veggies!

Quick Hummus

  • Servings: 10-12

QUICK HUMMUS from Unwind by Aarti Sequeira
Makes 10 to 12 servings

2 (15-ounce) cans chickpeas, drained, chickpea water retained
Kettle of boiling water
1 clove garlic, chopped
1/2 cup tahini
1/4 cup lemon juice (about 1 lemon’s worth)
6 ice cubes, standard 1-ounce cubes
Kosher salt and freshly ground pepper
Whole wheat pita bread, cut into small wedges, for serving
Extra lemon wedges for serving

Measure out 1/4 cup of chickpea water (also known as aquafaba) before draining the chickpeas and set aside. Tumble drained chickpeas into a large bowl and cover with hot water by a couple of inches. Allow to rest for 15 minutes.

Now make the hummus: Drain warm chickpeas and immediately pour them into your food processor. Buzz for 2 to 3 minutes until smooth paste forms.

Add the reserved aquafaba, garlic, tahini, lemon juice, ice cubes, and 1 teaspoon salt. Buzz for 5 minutes until a smooth, fluffy hummus comes together. Taste for seasoning, adjusting salt, lemon juice, and tahini as you like. Spoon hummus onto your serving tray. Serve with warm pita bread and lemon wedges.

NOTE: If desired, you can include olives on your serving tray.

  1. I love hummus especially homemade. I like to make a medieval recipe which has lots of herbs in it. I am of two minds about aquafaba – we were always told to rinse it off from the beans or chickpeas very very well as it contains…not so good for you stuff! So I tend to wash it away regardless…

    • The way you make hummus with herbs sounds good, Sherry! I have always rinsed my chickpeas too (aquafaba is only in cans of chickpeas, not beans) but found out this info about aquafaba from WebMD.com: Aquafaba is an egg replacement usually made from chickpea water…. Not only is it a healthy alternative to eggs, but it is also vegan-friendly. Aquafaba was discovered by accident, and it has made a huge difference in the vegan community.

  2. Hi Nancy, this is certainly a different way of preparing hummus and I have to give it a try. BTW, I’ve been having a problem leaving comments lately. The comment block doesn’t always show up. I couldn’t let you know that I liked your brownies but way able to “like” it.
