
Autumn is in the air and that’s when I like making recipes with apples! You probably wouldn’t think about using apples in biscuits, but it’s really good! The tart, grated Granny Smith apples in these savory Apple-Cheddar Biscuits make them moist and tender. And these are drop biscuits, made with a baking mix, so they’re easy to make!
I mentioned that these are savory biscuits…they also include some fresh chopped chives and shredded Cheddar cheese. They’re great served at breakfast, brunch, or even dinner…or any time you want a savory, cheesy snack!

Apple-Cheddar Biscuits
APPLE–CHEDDAR BISCUITS by NancyC
Makes 12 drop biscuits
2 cups all-purpose baking mix
1/2 cup milk
1/2 teaspoon salt
1 cup coarsely grated Granny Smith apple, about 1 large
1 1/3 cups shredded Cheddar cheese
2 Tablespoons finely chopped fresh chives, divided
2 Tablespoons butter, melted
Preheat oven to 400˚F. Line a 10 x 15″ baking sheet with parchment paper; set aside.
In large bowl, mix together the baking mix, milk, and salt. Then stir in the grated apple, shredded Cheddar cheese, and 1 Tablespoon of the chives, mixing until all ingredients are combined (save the rest of the chives for later).
Drop dough by 1/4 cupfuls, about 2″ apart, on your parchment-lined baking sheet (you can also use a scoop to drop the dough).
Bake biscuits at 400˚F for 15 minutes. While baking the biscuits, mix the melted butter and remaining 1 Tablespoon of chopped chives together.
Remove biscuits from oven and brush the tops with the butter/chive mixture; then return to the oven to bake an additional 4 to 5 minutes, until biscuits are golden. Serve warm.

You can serve the biscuits on a large platter or even a large bowl. The bowl I used is a ceramic mixing bowl from maryandmartha.com.
