
These super-easy Berry Tarts make a wonderful dessert for summer! There’s no baking involved because you use store-bought dessert shells for these tarts. There’s a thin layer of raspberry or blueberry jam on the inside bottom of the dessert shell to add a little extra sweetness to the tart. And the creamy filling is a simple mix of cream cheese, confectioners’ sugar, and a little vanilla extract. Then you just top with fresh berries, like raspberries and blueberries, for a sweet-tasting and sweet-looking dessert!

I think the size is perfect, too—these tarts are not too small and not too big—they’re just right! 🙂 It’s also easy to make fruit substitutions in these—instead of raspberries, try sliced strawberries, or switch out the blueberries for blackberries. Not a berry lover? Use other kinds of fresh fruit, like sliced peaches and/or sliced kiwifruit!

BERRY TARTS
Makes 6 tarts
6 dessert shells
1 (8-ounce) block of cream cheese, softened
1/2 cup confectioners’ sugar
1/4 teaspoon pure vanilla extract
Raspberry or blueberry jam (1/2 teaspoon per tart)
Fresh blueberries and raspberries, to top the tarts
Make the filling: In a medium-size bowl, mix together the cream cheese and confectioners’ sugar until smooth. Add the vanilla extract, blending everything together well; set aside.
Arrange dessert shells on serving plate. Spread 1/2 teaspoon of jam onto the bottom of each dessert shell, then spoon and spread 1 1/3 Tablespoons of the filling mixture into each dessert shell.
Top each tart with the fresh blueberries and raspberries. Have fun making different fruit arrangements on the top of each tart!
Refrigerate tarts until ready to serve.
NOTE: You can use other kinds of fresh fruit to top the tarts, including sliced strawberries, blackberries, sliced kiwifruit, and sliced peaches.
