Quick breads make a great snack or breakfast and brunch item, and this Cranberry-Orange Quick Bread is especially nice for this time of year! This quick bread is made with fresh or frozen cranberries, but you could also substitute dried cranberries if you prefer. I like it best with fresh cranberries! There’s some orange juice and orange extract to give it a nice citrus flavor—and you can also add a little orange zest if you like.
This quick bread is easy to make and you can serve it the same day or next day after baking it, or you can freeze it for later, anywhere from a week to a month! It’s great for the holiday season too, when we crave that cranberry-orange flavor!
Cranberry-Orange Quick Bread
CRANBERRY-ORANGE QUICK BREAD by NancyC
Makes one 8 x 4″ loaf
1 1/2 cups all-purpose unbleached flour
3/4 cup granulated sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 1/2 teaspoons cinnamon
1 large egg
1/2 cup orange juice
2 Tablespoons butter, melted
2 to 3 teaspoons pure orange extract
Optional: 1 Tablespoon orange zest
1 1/2 cups fresh or frozen cranberries, coarsely chopped
Preheat oven to 350˚F. Grease and flour an 8 x 4″ loaf pan; set aside.
In large bowl, blend flour, sugar, baking powder, baking soda, salt, and cinnamon; set aside.
In small bowl, mix the egg, orange juice, melted butter, and orange extract. Add to the dry ingredients in the large bowl, stirring just until moistened. Fold in the chopped cranberries and stir until evenly distributed in batter.
Pour batter into your prepared loaf pan and bake at 350˚F for 45 to 50 minutes, until toothpick inserted in center comes out clean.
Cool in pan for 5 to 10 minutes, then remove loaf from pan and cool completely on a wire rack. Then slice and serve—you can also serve slices spread with softened butter or cream cheese.

I made this but it only rose to 1/2 pan. What did I do wrong?

Over-mixing sometimes causes baked goods not to rise, or if you made it in a 9 x 5″ pan, your loaf would be flatter also. Here’s an article about other causes of quick breads not rising:
