Blackberry-Honey Lemonade

Drinking lemonade in the summertime is always a treat, and it can be a nice change of pace trying out different lemonade flavors. I’ve made Strawberry Lemonade, so I thought I’d try making some lemonade with blackberries. And I wanted to sweeten it with honey instead of sugar to make it a little healthier—I’m not sure if it’s really that much healthier, but the honey gives this lemonade a nice light sweetenss!

I really like the way this Blackberry-Honey Lemonade tastes! It has a rich fruity flavor from the blackberries, but it’s very lemony, too. This is the perfect thing to drink on a hot summer day, as you’re sitting in a nice shady area outside…with your feet propped up…maybe even reading a good book! 🙂

Blackberry-Honey Lemonade

BLACKBERRY HONEY LEMONADE by NancyC
Makes about 6 servings

1 1/2 cups fresh blackberries (if desired, use an additional 1/2 to 1 cup of blackberries as a garnish and/or to stir into the lemonade)
4 cups cold water, divided
2/3 cup honey
3/4 cup lemon juice
2 to 3 lemons, sliced (use some for garnish and some for stirring into the lemonade)

In a blender, add berries and 1 cup of the water and blend about 1 to 2 minutes, until berries are pureed. Strain the juicy part of the mixture into a small bowl with a wire mesh strainer, discarding the solids and seeds; set aside.

Heat a second cup of water with the honey in a small saucepan (or microwave in a microwave-safe container), bringing it to a boil; remove from heat and stir mixture until honey is dissolved in the water; set aside.

In a large pitcher (about an 8-cup size), pour remaining 2 cups of water and the lemon juice, stirring together with a large spoon. Then add the honey/water mixture and the juicy blackberry mixture, stirring everything together well.

Refrigerate mixture until chilled. When ready to serve, add in some ice, lemon slices, and additional blackberries to the pitcher of lemonade, saving some of the lemon slices and berries as a garnish for the top of the pitcher and for the individual serving glasses.

Stir the mixture in the pitcher to ensure all ingredients are well-blended, then add your garnish of lemon slices and berries on top. Serve this lemonade in serving glasses over ice and garnish each glass with a lemon slice. and a few berries, if desired.

  1. Oh my gosh, yes please! We are in the triple digits in my neck of the woods and staying hydrated is key. But sometimes water can be too much and there’s nothing quite refreshing like a glass cold of lemonade. I have never tried it with blackberries but I can imagine it’s packed with flavor!
