Calico Beans

If you have never had Calico Beans, you’re missing out on something very tasty! There are a variety of beans in this recipe, along with ground beef and bacon for the meat lovers in your life! This recipe has a rich, baked bean-type flavor too, thanks to the ketchup, molasses, and brown sugar that are part of the saucy mixture.

You can serve this as a side dish, or even as a main dish—in fact, a serving of these Calico Beans, along with some cornbread, like the Pumpkin Spice Cornbread I recently made, would make a wonderfully simple and hearty meal!

Calico Beans

Makes 10 servings

1/2 pound ground beef
1 cup yellow onion, chopped
2 to 3 cloves minced garlic
1/2 pound bacon, cooked and crumbled
3 (15-ounce) cans baked beans in sauce
1 (16-ounce) can Pinto beans, drained and rinsed
1 (16-ounce) can Great Northern beans or Butter beans, drained and rinsed
1 (16-ounce) can red Kidney beans, drained and rinsed
1/2 cup ketchup
2 Tablespoons molasses
1/3 cup packed light or dark brown sugar
1 teaspoon salt
1 teaspoon prepared mustard
2 teaspoons apple cider vinegar

Preheat oven to 350˚F.

In a medium-size skillet, cook ground beef, onion, and garlic over medium heat, stirring until beef is browned and crumbly; drain excess fat.

In a very large bowl, combine the ground beef mixture, the cooked and crumbled bacon, the 6 cans of beans, and the ketchup, molasses, brown sugar, salt, mustard, and cider vinegar, stirring everything together. Then place mixture into a 3-quart baking dish or 9 x 13″ pan.

Bake, covered with foil, at 350˚F for 40 minutes; uncover and bake 10 to 15 minutes longer. Remove from oven and serve.

NOTE: You can also cook these beans in a slow cooker on high for 3 to 4 hours.
