I was wanting to make some cookie bars with M&M’s and since it’s so close to the 4th of July, I thought I might as well make them patriotic! So I used mini red, white, and blue M&M’s and some fun sprinkles, and theses Patriotic M&M’s Cookie Bars turned out so colorful and yummy! They are thick and chewy and very chocolatey, because they also have some mini semi-sweet chocolate chips mixed in. If that sounds like too much chocolate (is there such a thing?), you can always leave out the mini chocolate chips.
I found some fun red, white, and blue star-shaped sprinkles that I sprinkled on top of the cookie bars before baking, and I mixed in some of these star sprinkles, along with some regular red, white, and blue sprinkles, into the batter. So these cookies bars are colorful inside and out! 🙂
Patriotic M&M's Cookie Bars
PATRIOTIC M&M’s COOKIE BARS by NancyC
Makes a 9×13″ pan
1 cup (2 sticks) unsalted butter, softened
1 cup granulated sugar
1 cup light or dark brown sugar, packed
3 large eggs
2 teaspoons pure vanilla extract
2 1/2 cups all-purpose unbleached flour
1 teaspoon cornstarch
1/2 teaspoon baking powder
1 teaspoon salt
1 1/4 cups plus 1 Tablespoon mini Red, White, & Blue M&M’s (plus the remaining mini’s from a 10.10-ounce bag, for sprinkling on top–about 1/4 cup)
1 cup mini semi-sweet chocolate chips
1/4 cup red, white, and blue sprinkles (plus 1/2 Tablespoon for sprinkling on top)
Preheat oven to 350˚F. Grease a 9×13″ pan or line with parchment paper; set aside.
In large bowl, cream butter, granulated sugar, and brown sugar until light and fluffy; then mix in the eggs and vanilla extract.
In a medium-size bowl, blend flour, cornstarch, baking powder, and salt.
Add dry ingredients to the wet ingredients in the large bowl and mix everything together until combined. Fold in the mini M&M’s, mini chocolate chips, and sprinkles, stirring until evenly incorporated in batter.
Spread cookie dough evenly in prepared 9×13″ pan. Sprinkle extra 1/4 cup of mini M&M’s and 1/2 Tablespoon of sprinkles on top.
Bake at 350˚F for 30 to 35 minutes, until edges are lightly golden. Let cool completely, then cut into squares.
