Dark Chocolate-Caramel Blondies

Caramel is a great fall flavor and you can’t go wrong when you pair it with dark chocolate! And because I was craving something thick, soft, and chewy, blondies sounded like a great thing to make—thick and chewy blondies with dark chocolate and caramel added in! It sounded really good, so I baked up a pan of these, and they really are good! 🙂

These blondies make a yummy desert or snack. I made them in a square 8 x 8″ pan. If you don’t have a pan that size, you can use a 9 x 9″ pan, but the blondies won’t be quite as thick…and the baking time may be a few minutes less. They’re very easy to make—after stirring up the batter, you just add in some dark chocolate chips and some of those caramel bits, stir it up again, add the batter to your pan, and bake!

In a medium-size bowl, add melted butter and brown sugar, blending together well. Add in the egg, mixing well, then stir in the vanilla extract. Add this mixture into the flour mixture, stirring everything together until combined. Batter will be thick!

Fold in the chocolate chips and caramel bits, stirring until evenly incorporated in batter.

Spoon and press batter evenly into your prepared 8 x 8″ pan. Bake for 30 to 33 minutes, until toothpick inserted in center comes out clean. Let cool completely in pan, then cut into squares.

The caramel helps make these blondies extra chewy and I’m such a big fan of caramel anyway! I tend to use caramel more in my baking in the fall. Butterscotch and maple are other flavors fall flavors I like to use!

That’s something I really like about the changing seasons—the fun of experiencing different seasonal flavors and foods. Not only that, but I also look forward to celebrating the different seasons with meaningful traditions and embracing the change in the weather by enjoying favorite activities especially for that time of year! The different seasons add variety and fun to our days, not to mention a lot of special memories!

So during this crisp and colorful time of year, let’s take in all the wonder it brings and be thankful for the abundant blessings we’ve been given. Psalm 65:11 (NLT) is a special reminder of that: You crown the year with a bountiful harvest; even the hard pathways overflow with abundance. Have a beautiful time enjoying all the goodness in this season!
