Peanut Butter Granola

If you’re a fan of peanut butter, you’ll really like this granola! It has a great peanutty flavor! You know, I wasn’t sure that peanutty was actually a word, but it turns out it is, and it’s been used since the 1870’s! This recipe for Peanut Butter Granola makes a big batch, about 9 cups. You can use your favorite brand of creamy natural peanut butter to make this, and the recipe also calls for some cocktail peanuts, too. There’s also honey, olive oil, flaxseed, and a little brown sugar added in, so overall, the ingredients are pretty healthy!

Have this Peanut Butter Granola for breakfast with some milk or sprinkle it over Greek yogurt and add some fruit for a breakfast or brunch parfait. Or have it as a snack later in the day. You could even use it as a healthier ice cream topping!

Peanut Butter Granola

PEANUT BUTTER GRANOLA
Makes about 9 cups or 12-14 servings

1 1/2 cups creamy natural peanut butter
1 cup honey
2/3 cup light olive oil
1 1/2 Tablespoons pure vanilla extract
1/2 cup packed light brown sugar
1/2 teaspoon salt
1 teaspoon ground cinnamon
6 1/2 cups old-fashioned oats
1/2 cup ground flaxseed
2 1/2 cups cocktail peanuts

Preheat oven to 325˚F. Line a large 13 x 18″ rimmed baking sheet with parchment paper; set aside.

In medium size bowl, mix the peanut butter, honey, olive oil, vanilla extract, brown sugar, salt, and cinnamon, stirring together well; set aside.

In large bowl, stir together the oats, flaxseed, and peanuts.

Pour the peanut butter/honey mixture over the oat mixture and mix until all the dry ingredients are coated.

Spread granola mixture evenly on prepared baking sheet and bake at 325˚F for 45 minutes, stirring granola every 15 minutes for even baking. Let cool completely on pan, then store in an airtight container for up to 2 weeks.
