Cherry Drop Scones

If you’re a fan of coffee or tea or both (like me), you’re probably a fan of scones, too! I hadn’t ever made cherry scones and I thought that sounded good, so I tried making some with dried cherries several times, but they just would not turn out right! These were the kind where you knead the dough a little and pat it into a circle and cut it into wedges—I’ve made scones that way many times before, but these cherry scones were just not working out for me! So then I thought, why not try making drop scones? Kind of like drop biscuits, where you mix up the dough, drop scoops of it on your baking sheet, and bake—something quick and simple! So I experimented a little and came up with these Cherry Drop Scones.

I really like the way these scones turned out and I think they taste great, too! They bake up nicely and have a simple glaze that you drizzle on top after they’re cooled, which gives them a light, sweet finishing touch. Have them with coffee for breakfast or as an afternoon tea time snack. If you’ve never made scones before, this is a simple recipe that’s great to start out with! If you don’t have or like dried cherries, you could substitute raisins, dried cranberries, or dried blueberries.

CHERRY DROP SCONES by NancyC
Makes 10 scones

2 cups all-purpose unbleached flour

1/2 cup granulated sugar

2 teaspoons baking powder

1/4 teaspoon salt

1/2 cup (1 stick) butter, chilled and cut into small chunks

1/2 cup sour cream or plain Greek yogurt

1 large egg

1 cup (or 5-ounce package) dried cherries (optional: cut some of the larger cherries in half for smaller bits)

GLAZE: 1 cup confectioners’ sugar and 2 Tablespoons milk

1. Preheat oven to 350˚F. Lightly grease or line an 11 x 17″ baking sheet with parchment paper; set aside.

2. In large bowl, mix together the flour, sugar, baking powder, and salt; cut in the butter using a pastry blender or fork, until mixture resembles coarse crumbs.

3. In a small bowl, mix together the sour cream and egg, then add this mixture to the flour mixture in the large bowl. Mix everything together (dough will be thick and crumbly), then mix in the dried cherries (if you want smaller bit’s of cherries, cut the larger cherries in half before mixing in the batter).

4. Using an ice cream scoop, drop dough onto prepared baking sheet—you should have 10 mounds of dough, spaced 2 to 3 inches apart. Bake at 350˚F for 18 to 22 minutes or until golden and toothpick inserted in center comes out clean.

5. Let scones cool completely, then drizzle with the glaze. Let glaze set, then serve.

Taking time out for a coffee-or-tea-and-scone break is a nice, simple way to treat yourself during a busy day. It never hurts to take a little time to rest and recharge. As you sip your coffee or tea and enjoy your scone, take a deep breath and release your worries, knowing God will work things out for your good (Romans 8:28). And think thankful thoughts for the way He fills your life with good things (Psalm 103:5). Sometimes it just takes some quiet moments like this to help you feel refreshed and renewed, ready to tackle the rest of your day!
