Cinnamon Donut Muffins

Baking on a cold winter day is one of my favorite things to do—I love the way it warms up the kitchen! These Cinnamon Donut Muffins were one of the most recent things I made. The warmth from the oven and the aroma of cinnamon made the kitchen extra cozy.

These tasty muffins are made with a simple batter spiced with cinnamon and a little nutmeg. And they’re topped with a cinnamon-sugar coating, just like a cinnamon-sugar donut! There’s something comforting about enjoying a sweet, simple, freshly-baked muffin on a chilly morning. It just may give you a little extra incentive to jump out of bed when you’d rather stay under the covers!

CINNAMON DONUT MUFFINS by NancyC
Makes 16 muffins

FOR BATTER:

3 cups all-purpose unbleached flour
3 teaspoons baking powder
1 teaspoon salt
2 1/4 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
2 large eggs
2/3 cup granulated sugar
1/2 cup light brown sugar, packed
1 cup milk
1 teaspoon pure vanilla extract
2/3 cup butter, melted (10 Tbsp. plus 2 tsp.)

FOR CINNAMON SUGAR (for the muffin tops):
1/2 cup granulated sugar
1 1/4 teaspoons ground cinnamon
3 Tablespoons butter, melted (keep this in a separate small bowl)

Preheat oven to 350˚F. Line two 12-cup muffin pans with 16 paper liners; set aside.

In large bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg. Set aside.

In a small bowl, mix the eggs, granulated sugar, and light brown sugar together well, then add in the milk, vanilla extract, and melted butter.

Add the egg mixture to the flour mixture and mix just until combined.

Fill each muffin cup about 2/3 full. Bake at 350˚ for 17 to 20 minutes, or until toothpick inserted in centers comes out clean. Let muffins cool in pan for 5 minutes.

While muffins are cooling, make the Cinnamon Sugar Topping: In small bowl, mix the sugar and cinnamon together. Put the melted butter separately in another small bowl; set aside.

To add the Cinnamon Sugar coating, dip the tops of the warm muffins into the melted butter, then dip into the cinnamon sugar mixture.

Serve warm or cool completely and serve later.
