Crumb Coffee Cake

Now that the weather is turning cooler, I’m drinking more hot coffee and tea. Especially in the chill of the morning. And something that goes great with these beverages is a nice slice of Crumb Coffee Cake! I really love the crumb topping on this breakfast cake—it adds just the right amount of sweetness!

This easy coffee cake is made with baking mix and a few other simple ingredients. And the crumb topping is sweetened with brown sugar and spiced with a little cinnamon. Chopped pecans are in the topping too, but you could substitute walnuts if you prefer. For those of you who aren’t morning people, maybe knowing there’s a slice of coffee cake waiting for you will make it easier for you to get up early! 🙂 It’s certainly worth a try! 😉

Crumb Coffee Cake

Makes 10 servings

2 1/2 cups baking mix
1 1/2 teaspoons ground cinnamon
3/4 cup milk
1/3 cup sour cream
3 Tablespoons sugar
1 large egg

CRUMB TOPPING:

1/3 cup baking mix
1/3 cup packed light brown sugar
1/2 teaspoon ground cinnamon
1/3 cup chopped pecans
2 Tablespoons butter, melted

Preheat oven to 350˚F. Grease or line a 9″ round pan with parchment paper; set aside.

In small bowl, combine the ingredients for the Crumb Topping: baking mix, brown sugar, cinnamon, and chopped pecans. Then pour in the melted butter and mix everything with a fork until crumbly; set aside.

In medium-size bowl, mix together the baking mix, cinnamon, milk, sour cream, sugar, and egg, mixing well.

Pour batter into prepared pan and sprinkle evenly with the Crumb Topping.

Bake at 350˚F for 25 minutes, or until toothpick inserted in center comes out clean. Let cool in pan completely.

Optional: To add a simple glaze on top, mix together 1/2 cup confectioners’ sugar and 1 to 1 1/2 Tablespoons milk. Drizzle over the top of the cake after it has cooled, and let set. Then slice and serve.

This coffee cake makes a nice simple breakfast on it’s own or you can serve it with fruit, eggs, or a breakfast casserole for a more substantial morning meal. It’s also great for a weekend brunch with family or friends. So enjoy this breakfast treat…and don’t forget your hot coffee or tea! 🙂

  1. What do you define as “baking mix”? Do you mean like a Bisquick? I don’t use those mixes due to seed oils in it–do you have a substitution?

    • Yes, by “baking mix” that would mean something like Bisquick–any baking and pancake mix. You could make your own homemade baking mix, though–if you google “homemade baking mix” you’ll find some recipes for that!
