Berry-Bran Muffins

The combination of bran cereal and fresh berries makes these muffins really good! And they’re probably a little healthier than other kinds of muffins because of the bran. They’re also sweetened with honey and brown sugar, for a lightly-sweet flavor.

In these muffins, you can use raspberries, blueberries, blackberries, or chopped strawberries—whatever fruit you like best! You could probably even used sliced bananas! These muffins bake up nicely with rounded tops. Enjoy them for breakfast, or an afternoon snack, or anytime you’re having a cup of coffee or tea!

BERRY-BRAN MUFFINS by NancyC
Makes 14 muffins

3 cups bran flakes cereal
3/4 cup milk
1 1/4 cups all-purpose unbleached flour
1 1/4 teaspoons baking soda
1 1/4 teaspoons ground cinnamon
1/4 teaspoon salt
1/4 cup honey
1/2 cup lightly packed brown sugar
2 large eggs
1/2 cup canola oil or light olive oil
1 teaspoon pure vanilla extract
1 1/2 cups fresh raspberries, blueberries, blackberries, or chopped strawberries

Preheat oven to 375˚F. Line 2 standard muffin tins with a total of 14 paper liners; set aside.

In a medium-size bowl, soak the cereal in the milk for 15 minutes.

In another medium-size bowl, mix together the flour, baking soda, cinnamon, and salt.

In a large bowl, mix together the honey, brown sugar, eggs, oil, and vanilla. Then add the milk/cereal mixture and mix everything until just combined.

In a small bowl, toss 1 Tablespoon of the flour/baking soda mixture with the berries; set aside. Gently fold in the remaining flour mixture into the cereal mixture, mixing just until combined. Then fold in the berries.

Divide batter evenly among the 14 lined muffin cups. Bake at 375˚F for 20 to 22 minutes, or until muffin tops are set. Cool for 5 minutes, then serve warm. Or cool completely and serve.

I like making muffins because the baking time is fairly short—which is nice during the hot summer months when I don’t like to use my oven a lot! Do you make muffins often?
