Chocolate Chip Banana Muffins

I’ve been in a muffin-making mood lately! And here’s another recipe for all you muffin-lovers out there, who are also banana-lovers and chocolate-lovers: Chocolate Chip Banana Muffins! Some muffins are made with sour cream, but these muffins happen to be made with cream cheese! They don’t have a cream cheese filling though—the cream cheese is mixed into the batter. And it gives these muffins a rich, creamy flavor and nice dense, moist texture.

I found this recipe years ago in an old issue of Southern Living magazine, and I tweaked it a little. This recipe makes 24 muffins, and I added some chocolate chips in mine instead of chopped pecans. I also used light instead of regular cream cheese, a little more vanilla extract, and used unbleached flour. If you are a banana-lover, I think you will enjoy these! 🙂

Chocolate Chip Banana Muffins

CHOCOLATE CHIP BANANA MUFFINS by NancyC, adapted from Southern Living
Makes 24 to 25 muffins

3/4 cup (1 1/2 sticks) butter, softened
1 (8-ounce) package cream cheese, softened
2 cups granulated sugar
1/2 to 1 teaspoon pure vanilla extract
2 large eggs
3 cups all-purpose unbleached flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups mashed ripe bananas (about 4 medium)
1 cup mini semi-sweet chocolate chips, plus extra for sprinkling on top

Preheat oven to 350˚F. Line 2 standard muffin pans with 24 paper liners; set aside.

In large bowl, beat butter and cream cheese with a mixer, or blend by hand, until creamy. Gradually add sugar, beating until light and fluffy. Add vanilla extract, then add eggs, 1 at a time, beating just until blended after each addition.

In another large bowl, whisk together flour, baking powder, baking soda, and salt; add this mixture to the butter/egg mixture, beating just until blended. Then stir in mashed bananas and mini chocolate chips.

Bake at 350˚F for 25 minutes or until toothpick inserted in center comes out clean. Cool muffins in pans for 5 to 10 minutes. While cooling, sprinkle tops with additional mini chocolate chips, if desired. Then remove from pans to a wire rack to cool completely.
