Cranberry-Pistachio Bark

Here’s a really easy and yummy treat for the holidays—Cranberry-Pistachio Bark! Made with white chocolate, dried cranberries, and pistachios, this Christmasy treat has a red-and-green color theme that makes an easy holiday dessert or snack. It’s also great for parties and get-togethers, and makes a yummy food gift at Christmastime.

Be sure to use white chocolate baking bars and not those vanilla baking chips—those aren’t actually white chocolate, and they don’t melt as well as the white chocolate bars. And don’t forget the sprinkling of coarse white decorating sugar over the top of the bark—it adds a nice festive sparkle to this holiday treat! 🙂

Cranberry-Pistachio Bark

CRANBERRY-PISTACHIO BARK by NancyC
Makes 10 to 12 servings

4 (4-ounce) white chocolate baking bars
1/2 cup plus 2 Tablespoons lightly-salted shelled pistachios, coarsely chopped
1/2 cup plus 2 Tablespoons dried cranberries
Coarse white decorating sugar, for sprinkling on top

Line a rimmed baking sheet with parchment paper; set aside.

In a microwave-safe bowl, melt the white chocolate baking bars in 30-second intervals in the microwave, stirring after each interval, until chocolate is melted—be careful not to overheat! Stir until chocolate is smooth and creamy.

Stir in 1/2 cup each of the pistachios and dried cranberries into the melted chocolate (save the rest for sprinkling on top).

Spread mixture evenly, about 1/4″ thick, onto your prepared baking sheet. Sprinkle the remaining 2 Tablespoons of pistachios and cranberries on top, pressing into the chocolate slightly. Lightly sprinkle coarse white decorating sugar over the bark.

Refrigerate until set, about 30 to 40 minutes, then break the bark into pieces. Store in refrigerator in an airtight container until ready to serve.

  1. Great post! I’ll have to try this. I’ve made peppermint bark in the past and was always embarrassed when people would rave over it and ask for the recipe, because it’s way too easy to make! Ha! Thanks for this great idea to try something new.
