Brownie Mix Cookies with Sprinkles

Not long ago, I posted a recipe for Chocolate Chip Brownie Mix Cookies, and here’s another version of these easy-to-make cookies—these brownie mix cookies are a little different in that they’re made with oil instead of butter and 2 eggs instead of 1, plus a small amount of milk. They’re chewy in the middle and crispier around the edges…and they’re topped with lots of colorful sprinkles!

These sprinkle-topped cookies make a fun treat for a special day like birthdays, or any time you want a colorful cookie! And you can make them seasonal throughout the year by using holiday sprinkles—for times like Christmas, Easter, St. Patrick’s Day, Independence Day, and autumn holidays like Halloween and Thanksgiving.

Brownie Mix Cookies with Sprinkles

BROWNIE MIX COOKIES with SPRINKLES by NancyC
Makes about 23 to 24 cookies

1 (18.3-ounce) box fudge brownie mix
1 Tablespoon unsweetened cocoa powder
1/2 cup light olive oil or canola oil
2 large eggs
1/2 Tablespoon milk
1/2 teaspoon pure vanilla extract
1 cup semi-sweet chocolate chips (or substitute milk, dark, or white chocolate chips)
Colorful Sprinkles, for the top of each cookie

Preheat oven to 350˚F. Line two 10 x 15″ baking sheets with parchment paper; set aside.

In large bowl, mix the dry brownie mix with the cocoa powder, oil, eggs, milk, and vanilla, blending well (batter will be thick). Fold in the chocolate chips and stir until evenly distributed in batter.

Scoop balls of dough, about 2 Tablespoons in size, and place on cookie sheets 2 inches apart. Top with sprinkles.

Bake at 350˚F for 11 to 12 minutes (do not over-bake, or cookies will be dry). Cool for several minutes on pan, then cool completely on wire rack.
