I discovered there are quite a few of you out there who are brownie fans, after posting a few brownie recipes lately! So I thought I’d make some brownie cookies, which are also very yummy. These Chocolate Chip Brownie Mix Cookies are made with a mix, like the name says, and they are really easy to make! They’re chewy, chocolatey, and fudgy, and I’m sure if you love brownies, you will enjoy these!
I used semi-sweet chocolate chips to mix into the batter for extra chocolate flavor, but you could use milk chocolate, dark chocolate, or white chocolate chips instead, if you like. Using a cookie dough scoop also helps give the cookies a nicer shape, so do use one if you have one!
Chocolate Chip Brownie Mix Cookies
CHOCOLATE CHIP BROWNIE MIX COOKIES by NancyC
Makes about 20 to 22 cookies
1 (18.3-ounce) box fudge brownie mix (I used the Betty Crocker brand)
1 Tablespoon unsweetened cocoa powder
1/2 cup (1 stick) salted or unsalted butter, melted
1 large egg
1/2 Tablespoon milk
1/2 teaspoon pure vanilla extract
1 cup semi-sweet chocolate chips (or substitute milk, dark, or white chocolate chips)
Preheat oven to 350˚F. Line two 10 x 15″ baking sheets with parchment paper; set aside.
In large bowl, mix the dry brownie mix with the cocoa powder, melted butter, egg, milk, and vanilla, blending well (batter will be thick). Fold in the chocolate chips and stir until evenly distributed in batter.
Scoop balls of dough, about 2 to 2 1/4 Tablespoons in size, and place on cookie sheets 2 inches apart (use a cookie dough scoop if you have one!). Gently press balls of dough down a little so they’re the shape of a thick disk, about 3/4″ thick.
Bake at 350˚F for 10 to 12 minutes (do not over-bake, or cookies will be dry). Cool for several minutes on pan, then cool completely on wire rack.

Mmmm these look so good! We actually tried the Betty Crocker brownie mix last year and for some reason, it went really, really badly 😆 I don’t know why, it but they were just really wet and runny, even though we followed the instructions exactly. But we used it for just brownies rather than brownie cookies, which sounds like a better idea. xx

Wow, not sure why the mix didn’t work for you when you made brownies–I’ve made brownies with it too and never had a problem! That is a mystery! If you don’t want to use that brand, just use your favorite brownie mix! 🙂
