Cookies with M&M candies added in are so fun and colorful! I made some the other day with the M&Ms in spring colors. You can whip these cookies up in no time because they’re made with cake mix. These are great cookies for celebrating the different seasons—just use the seasonal M&Ms in the mix! Or make them for everyday snacks and use the regular colorful M&Ms or mini M&Ms!
Chocolate M&Ms Cake Mix Cookies
CHOCOLATE M&Ms CAKE MIX COOKIES by NancyC
Makes 15 to 16 cookies
1 (15-ounce) chocolate cake mix
1 teaspoon baking powder
2 large eggs
1/3 cup canola oil or light olive oil
1/2 teaspoon pure vanilla extract
1 cup M&Ms (I used the seasonal M&Ms in spring colors)
Parchment paper, for lining cookie sheets
Preheat oven to 350˚F. Line two cookie sheets with parchment paper; set aside.
In large bowl, blend cake mix and baking powder. Then add the eggs, oil, and vanilla extract, mixing everything well (batter will be thick!). Fold in the M&Ms and stir until evenly distributed in batter.
Put rounded balls of dough, about the size of 2 Tablespoons (a scoop about that size works great for this), on cookie sheets, spacing about 3 inches apart.
Bake at 350˚F for 11 to 13 minutes. Remove from oven and cool cookies for a few minutes on the pan, then remove to a wire rack to cool completely. NOTE: cookies may look puffy right out of the oven, but they will flatten as they cool!
