Roasted Roma Tomatoes

If you’ve never made roasted tomatoes, you’re missing out—especially if you love tomatoes! While I like eating them fresh from the garden, roasting them gives the tomatoes such a rich flavor. They’re so easy to make, too!

This recipe works really well for Roma tomatoes or other kinds of tomatoes similar in size. I’ve included two ways you can roast them in the recipe—one way includes roasting at two different temperatures and then there’s a note at the end about a slightly quicker roasting option at one temperature and a little less time. So be sure to check those options out—the tomatoes are delicious either way!

ROASTED ROMA TOMATOES by NancyC
Makes about 8 servings

10 Roma tomatoes, halved lengthwise
2 Tablespoons olive oil
Optional: 1/2 Tablespoon balsamic vinegar
2 to 3 cloves of garlic, minced
Optional: 1 teaspoon sugar or honey
1/2 teaspoon salt
1/8 teaspoon pepper
1 teaspoon dried basil
Optional: 1 to 2 Tablespoons shredded Parmesan cheese

Preheat oven to 375˚F. Line a 10 x 15″ or 13 x 18″ baking sheet with parchment paper.

Place halved tomatoes on lined baking sheet. Drizzle with olive oil (and balsamic vinegar, if using), then sprinkle evenly with minced garlic, sugar (or drizzle with honey), salt, pepper, and dried basil.

Roast in oven at 375˚F for 40 minutes, then turn up oven temperature to 400˚F and roast for 20 more minutes.

Turn off oven and let tomatoes sit in the oven for 10 minutes, then remove from oven. If using Parmesan cheese, sprinkle it evenly over the warm tomatoes. Serve warm or cool completely to eat or use later in other recipes (use them within 5 days).

NOTE: A quicker roasting option is to preheat oven to 425˚F and roast the tomatoes for 45 to 50 minutes. Sprinkle with 1 Tablespoon Parmesan cheese, if desired, after roasting is finished.

USES FOR ROASTED TOMATOES: They’re delicious as is for a side dish, but you can also use them in sandwiches, salads, scrambled eggs or breakfast casseroles, pasta salads, homemade pizza or focaccia, homemade tomato soup, or pasta sauce.
