For a fun red, white, and blue dessert, make these Patriotic Ice Cream Sandwiches! They’re super easy to make, and they come together in minutes (you should freeze them for about an hour, though, before serving)! They’re so fun and colorful, and all you need to make them are store-bought mini ice cream sandwiches and some red, white, and blue sprinkles—how easy is that?! It’s a great treat for kids, but everyone will enjoy these!
Patriotic Mini Ice Cream Sandwiches
PATRIOTIC MINI ICE CREAM SANDWICHES
Makes 16 mini ice cream sandwiches
- 1 box of 16 mini ice cream sandwiches (for a larger crowd, get 2 boxes)
- 1 container of red, white, and blue sprinkles (I found some star-shaped sprinkles, too, so I used both!)
Line a 9 x9 ” pan with parchment paper or wax paper.
Open the box of mini ice cream sandwiches, remove them from the box, and return them to the freezer—removing them from the box will allow you to easily grab each sandwich from the freezer, one at a time.
Pour the sprinkles in a small shallow bowl that you can easily dip the edges of the mini ice cream sandwiches in.
Working quickly, take your first mini ice cream sandwich out of the freezer and unwrap. Dip all four sides into the sprinkles, so that each side is colorfully coated (you may need to dip each side a few times to coat well). Place the dipped mini ice cream sandwich in the lined 9 x 9″ pan, placing on one of the long edges (as shown in the photo), and continue until all the mini ice cream sandwiches have been dipped in sprinkles (if the ice cream starts to get soft on the ones you’ve dipped before you’re finished with all of them, put the pan of dipped ones in the freezer, and just add the rest of the ice cream sandwiches to the freezer after you dip them).
Freeze until firm, at least 1 hour, then serve.

How far in advance can you make these? I want to make for a kids treat a couple of days out, but don’t want them to freezer burn with the ice cream being open.

Hi Kortney, they should be okay in the freezer if you wrap them well or package them in freezer bags!

How do keep them from sticking together while in the freezer? I was thinking I could put a small strip of sandwich wrap paper (red & white check) around them, and this would help when serving them, so people would have something to hold them while eating. I have found Ice Cream sandwiches tend to be a little sticky.
