If you’re needing a sweet treat idea for Easter, here’s something that’s super-easy, and you may already have the ingredients on hand! Egg Nest No-Bake Cookies are fun and yummy, and I like to think they’re a little healthy because there’s a lot of oatmeal in them! 🙂 These cookies are just a variation of the classic no-bake cookies that everyone loves, with some specked chocolate or malted milk chocolate eggs added on top!
These cookies make a great treat for Easter or any springtime party…and it’s always nice to have a batch of these at home to snack on! You can serve them on a big plate or platter—the one I used here is a round dessert plate from maryandmartha.com—it’s called the Fresh Joy Dessert Plate. I love the edging on this platter!
Egg Nest No-Bake Cookies
EGG NEST NO-BAKE COOKIES by NancyC
Makes about 38 cookies
- 2 cups granulated sugar
- 1/2 cup milk
- 1/2 cup (1 stick) salted butter (or use unsalted butter and add a dash of salt)
- 1/3 cup unsweetened cocoa powder
- 1/2 cup creamy peanut butter
- 1 1/2 teaspoons pure vanilla extract
- 3 cups old-fashioned rolled oats
- 1/2 cup sweetened coconut flakes
- mini chocolate eggs (like Cadbury’s) and/or Mini Robin Eggs
Line two baking sheets with parchment paper or wax paper; set aside.
In medium saucepan over medium heat, combine sugar, milk, butter, and cocoa powder until mixture is melted and smooth. Raise heat slightly to bring to a boil, and boil mixture for 1 to 1 1/2 minutes (no longer than that!), stirring continuously; then remove from heat immediately.
Add in the peanut butter, vanilla extract, oats, and coconut flakes; stir to combine.
Working quickly (because this mixture sets pretty quickly), drop tablespoon-sized mounds of the mixture onto lined baking sheets (a scoop works great for this) and place 2 candy eggs in the center of each cookie, pressing down slightly. Let cookies set for at least 30 minutes before serving. Store any extras at room temperature or in the refrigerator, in an airtight container, for up to a week.
