If you like hummus, this is a great way to serve it as a casual meal! This Hummus Pizza uses your favorite store-bought or homemade hummus as the base, instead of tomato sauce, and is topped with lots of healthy goodies like cucumber slices, marinated artichoke hearts, kalamata olives, cherry or grape tomatoes, green onions, and feta cheese. These flavors are all great together and it’s kinda nice eating a pizza that’s good for you!
One thing you definitely need is a good pizza cutter to cut through all these toppings and the crust! Otherwise, the cutting of the pizza can get a little messy. But you can always make smaller individual-sized pizzas to avoid this issue. Some pre-made crusts come in individual serving sizes. Or you can use individual-sized flatbreads as your crust. If making individual pizzas, the ingredients in the recipe should be enough to make 4 mini pizzas.
HUMMUS PIZZA by NancyC
Makes about 6 servings
- 1 ready-made thin pizza crust (like Rustic Crust or Boboli) or use 4 mini pizza crusts (you can also substitute flatbread for the pizza crust)
- 1 cup of your favorite hummus (or one 8-ounce container)
- 1 cup thinly sliced cucumber slices
- 1 (12-ounce) jar quartered marinated artichoke hearts, drained, and quarters cut in half
- 1/2 cup pitted and sliced or halved kalamata olives (measure after olives have been sliced)
- 1 cup cherry or grape tomatoes, cut into halves or thirds (measure after tomatoes have been cut)
- 1/3 cup chopped green onion stems (or use chopped red onion)
- 1/4 cup feta cheese
- 1/2 Tablespoon olive oil
- Optional: salt and pepper, to taste
Preheat oven to 350˚F. Place ready-made pizza crust on an ungreased baking sheet or pizza pan and heat for 5 minutes, until very lightly toasted (if crust is too crispy, it will be hard to cut). Remove from oven, let cool slightly, and transfer to a large round serving plate, or keep on pizza pan.
Spread hummus evenly over crust, then arrange cucumber slices, artichokes, olives, tomatoes, and green onion over the hummus (you can arrange these ingredients any way you like—I put the cucumber slices down first, around the rim of the pizza. then I arrange the artichokes inward and slightly over the cucumber slices; then I put the olive slices and tomato halves or slices in the center; after that, I sprinkle the green onion over everything).
Top everything with a sprinkle of feta cheese, then drizzle with olive oil. Add salt and pepper to taste, if desired. Cut into slices with a pizza cutter and serve.
Note: You can follow the same directions making mini individual-sized pizzas; just divide the ingredients and toppings among 4 individual-sized crusts.

This is a great warm-weather recipe because the crust-baking time is so minimal and you can use produce from your garden in this, too—I know so many people who have cucumbers and tomatoes as staples in their gardens. Green onions are easy to grow too—I’m actually growing some in a pot!
