Thick & Chewy Peanut Butter Crispy Treats

I don’t think I ever would have made these Thick & Chewy Peanut Butter Crispy Treats if it hadn’t been for Marijo. One day at work I went by her desk and she had three bags of marshmallows sitting on one side of her desk area. “What are you going to do with those?” I asked. “Someone had extra marshmallows and gave me some,” she said. “I’ll probably give them to my grandkids. Do you want a bag?”

I thought for a minute, trying to think of what I would use them for. “I usually just use marshmallows in hot cocoa or when I make crispy treats,” I told Marijo. “Maybe I can make some of those. I haven’t made them in a while.” Marijo then told me how much she loved, loved peanut butter crispy treats. The more she talked about them, the more I wanted to make some! She pointed me to some recipes, so I looked at those and a few others and came up with my own version. Mine are a little thicker than most of the recipes I looked over, and because of how I adjusted some ingredients, I think they’re a little chewier, too.

I really like the way these turned out—thick and chewy, with great peanut butter flavor and a thin topping of chocolate! And they’re so easy to make. Thanks to Marijo for inspiring this recipe! 🙂

Thick & Chewy Peanut Butter Crispy Treats

  • Servings: 15-18

THICK & CHEWY PEANUT BUTTER CRISPY TREATS by NancyC        

Makes a 9×13″ pan

  • 1/2 cup butter (1 stick)
  • 2 (10-ounce) packages miniature or large marshmallows
  • 1 1/2 cups creamy peanut butter
  • 8 cups crisp rice cereal
  • 1 (12-ounce bag, or 2 cups) semi-sweet chocolate chips

In a very large saucepan, melt butter over low heat. Add marshmallows, stirring mixture until smooth and well-blended. Remove from heat and stir in the peanut butter, blending well.

Add cereal to mixture, stirring until well-coated. Spread mixture into a greased 9×13″ pan, pressing firmly and evenly (use a greased spatula or wax paper to do this, since mixture is sticky).

In another saucepan, melt chocolate chips over low heat, stirring frequently, until completely melted. Pour over the cereal mixture and spread to cover completely. Cool or refrigerate until chocolate is set, then cut into bars or squares.

    This is one of my absolute favorites! I can never resist them. When I was helping out my folks in South Dakota, one of the gas stations there had the best version and I couldn’t resist stopping in now and then, even when I didn’t need gas!! I’m sure these are 1000 times better. I don’t think I’ve made these since I was a teenager myself, but now I;m going to have to remedy that.
